Day Eighteen


Breakfast: Yogurt, granola, blueberries, banana, matcha green tea
Lunch: Hummus, lentil crackers, carrots
Snack: Synder's GF pretzel sticks (the best), sprouted rice cereal
Dinner: Grilled salmon with capers on a bed of greens, cucumbers and tomatoes! Red wine. Dark chocolate and mint tea


Synder's GF pretzel sticks takes the cake for best GF pretzels! I tried my new organic rice cereal today, it's very good. The only problem is I eat two bowls at a time. We made a great dinner of grilled salmon, delicious!  Since I only have 12 days left of GF I think I might extend it a few weeks while I cut out chocolate. I don't want to break out if I reintroduce.

Day Seventeen


Breakfast: Bag of popcorn, banana, lemon green tea
Lunch: Tomato soup, greens
Dinner: Lamb mousaka, lemon macaron, and rice pudding. Tea.

I had another interview today and two doctor appts in the city. I didn't eat anything until 11:00 so that is why I had popcorn for breakfast. I probably should have had just fruit. It was a super crazy day. I met up with a friend in montclair and brought her macarons. Best discovery of the day, they are gluten free!!! I was my dermo today and asked her about rosacea triggers. She said there is not much research yet on gluten, but known triggers are spicy foods, alcohol, chocolate, etc.. I might try to eliminate my chocolate consumption and see what happens! I should really do all sugar, but that's hard. Another note: I ate red meat again and I felt very bloated and sluggish afterward. I'm not sure if staying away from meat, then consuming it is making it harder to digest, but maybe good reasons to start eliminating it from my diet.

Day Sixteen

Breakfast: Yogurt, granola, blueberries, bananas, matcha green tea
Lunch: Egg, cheese sandwich on GF toast
Snack: Doritos (!)
Dinner: Silken tofu, seafood soup with rice, dark chocolate

I had an interview in the middle of the day so I had to rush lunch then ended up eating a bag of cool ranch doritos! Nuts. Dinner was ok. We went to a Korean restaurant so I couldn't order dumplings, seafood pancake or udon (my favorite).

Day Fifteen


Breakfast: Yogurt, granola, raspberries, bananas, matcha green tea
Lunch: rice cakes/almond butter, celery/almond butter
Snacks: GF pretzels
Dinner: GF pizza, dark chocolate

I noticed that I had a tiny red splotch pop up on my cheek. Not sure if the red wine could have triggered it or the gluten in the meatballs.. or something else! Cold weather isn't really good either. But I've been good with no more gluten, so we'll see if it goes away.  Hey I'm have done with the 30 days gluten free!!

Day Fourteen

Breakfast: GF pancakes, bananas, raspberries, tazo green tea
Lunch: Egg/cheese sandwich, grapes
Snack: Doritos, Salsa/chips, pistachios
Dinner: caprese, Green salad, turkey meatballs, asparagus, red wine, ice cream

We had a busy day of running around then visiting becky and her family for her birthday! I didn't realize that we would be staying for dinner and her mom was making pasta. I wasn't sure what I was going to do so I ate a lot of snacks, moz & tomatoes without the bread, and turkey meatballs with asparagus for dinner. The meatballs did have bread crumbs in there but it wasn't as much wheat as the pasta and bread, which I skipped. So I think it was a good solution.

Day Thirteen

Lunch: GF trader Joes Pizza, green salad
Snack: Glutino pretzels, grapes
Dinner: grilled calamari, Filet Mignon/grilled veggies, Red wine, dark chocolate/cashews, mint tea


Trader joes GF pizza is the best I've had so far! I split it with Brian since it's too large for one meal, but half is not really enough so I had some salad. Dinner we treated ourselves to the italian place down the street, not bad! We had a grilled calamari app, but I think they breaded the legs so I didn't have that many. Steak wasn't bad, but the first meat I've had in awhile and it didnt' sit right in my stomach.

Day Twelve

Snacks: rice crackers, edamame hummus
Lunch: glutino pretzels, orange
Dinner: spinach/cheddar frittata, green salad, toast, dark chocolate covered cashews, mint tea

I wished I had a better GF beer. It would have been nice to have one with dinner. I think beer is the only thing I'm really missing right now (and a good italian bread!) Brian bought a baguette last night to eat. I'm almost half way through this 30 day thing. We will see what happens at the end. But I'm sure I will do a mixture of GF and wheat products.

Day Eleven

Lunch: Avocado/chickpea GF tartine & eggplant soup, jasmine green tea
Snack: Hummus, rice crackers, GF mint macaron
Dinner: Lentil stew, green salad and toast. Dark chocolate & mint tea.


Lots of tea today! I met up with my friend Kim who recently had a baby. We went to Le pain quoditien, which is a healthy french cafe I guess. I love their avocado tartine so I opted for the GF option, but it was so tiny I had to get some soup as well. Not such else is new. It's difficult to see an improvement on my skin b/c its been very cold that always makes my face very dry and red.

Day Ten

Breakfast: Oatmeal, blueberries, banana, tazo green tea
Lunch: Edamame hummus, crackers and carrots
Snack: Glutino pretzels
Dinner: GF fusili pasta, marinara sauce, toast, green salad (spinach, tomatoes, orange pepper, cucumber) and red wine. Dark chocolate and mint tea

Today was a rather cold day (sub temps) so other then shoveling I stayed indoors. I haven't been thoughtlessly snacking as I had been, so I guess that is good. Probably a result of counting calories. Not much else is happening in terms of not eating gluten. My skin is still red without make up and I noticed my sinuses are super dry. Probably the cold weather. But it has only been ten days...

Day Nine

Breakfast: Oatmeal, blueberries, banana, tazo green tea
Lunch: Edamame hummus, rice crackers and carrots
Snack: Glutino pretzels
Dinner: Lentil Stew (potatoes, carrots, celery, onions and garlic), GF toast.


There's a huge snow storm today so I decided a stew would be the best dinner to make. Also I splurged and picked up glutino pretzels, they are better then the other brand I got. The lentil stew wasn't that bad! Although it could use a bit more flavor, will have to figure that out next time.

Day Eight

Lunch: Hummus, brocoli, carrots, glutino crackers, celery/peanutbutter
Snack: glutino crackers, cheese, mint tea
Dinner: Two boots gluten free pizza, gluten free beer

It was a fun day at my Mom's with my sister and nephews, then met up with Brian in Jersey City for pizza and book club. It was hard to turn down cookies my Mom bought from the bakery, but I'm not that into sweets. So it's nice to have an excuse! My friends Ula and James are doing raw food diet for a month and this week is just juice. That's a ton harder then gluten free!

Day Seven

Breakfast: Pancakes made from gluten free mix, bananas, blackberries, tazo green tea.
Lunch: Tuna/egg salad, avocado with GF crackers.
Snack: Rice crackers
Dinner: Tilapia, red cabbage, roasted sweet potatoes and green salad (spinach, heirloom tomato, cucumber, orange pepper), dark chocolate, mint tea.



Entering a full week of gluten free! I have felt more hungry this week, but I'm not sure if it's my body adjusting to no wheat. Brian wanted to get bagels for lunch and I thought it would have been nice to do. I'm not sure I'll stick to the gluten free diet b/c you really can't do good gluten free pizza, beer or bagels. Maybe I'll try to moderate when I reintroduce back into my system. Side note: we went to Trader Joes for the first time! They have a good selection of organic foods at a reasonable price. Not bad!

Day Six

Lunch: Gluten free veggie noodles, GF crackers
Snacks: Rice cakes, kale chips, avocado
Dinner: Three crispy corn shell veggie tacos, late night french fries!

I did feel very tired this morning and had a slight headache through out the afternoon. Could be that I over slept and watched a lot of TV last night. I noticed that pizza I ate was 600+ calories! I did technically eat two servings. The soup I had today was kind of blah. Not sure why, the broth was like a thin tomato so it had this weird sweetness. Not really into it. I had three stuffed veggie tacos at Chipotle and a late night at Brian's show. After we hit up a dinner in Edison b/c we were hungry at 2:00am. My first late night french fries in a long time!

Snack: Peanut butter, GF crackers, fuji apple, rice cake
Dinner: GF Udi's three cheese pizza, green salad (kale, tomato, orange peppers), GF beer, dark chocolate, mint tea


Today I thought a bit about carbs and bread. Nothing major. I think I need to find better snacks or things to keep me distracted :) My friend told me today to watch out if I start eating gluten again, b/c it could be hard on my system... hmmmm.  Also the gluten free beer is a no go. It's not so bad for the 1st few sips and it gives you a buzz, but after a bit it tastes medicinal. Bleh.

Dinner: Broccoli & cheese frittata, GF toast & butter, GF Beer (!), green salad (spinach, tomato, orange peppers, cucumbers)

Nothing crazy to report. I was super hungry on the way home from the city today, but I did not eat much snacks and I had a morning work out. I should probably try to eat more fruits for snacks.

Day Three

Lunch: Rice crackers & Hummus
Snack: GF pretzels and baked kale chips (home made!)
Dinner: Quinoa spaghetti with tomato basil sauce. GF toast w/butter and green salad (cucumbers, spinach, green pepper and tomato), Glass of red wine, dark chocolate!

Was hungry again when I woke up. So I added toast to the mix since I plan on running today. I didn't feel tired like I did yesterday, which makes sense. I should take a picture of my skin without make up so I can really compare as the weeks go on. Side note: quinoa spaghetti, not bad! It did taste different and texture was softer. Next time I will cook for less time.

Snack: Gluten free pretzels, some of a green smoothie from jamba juice
Lunch: Hummus & rice crackers
Dinner: Cured meats, cheeses, olives, brussel sprouts salad, salmon & lentils, chocolate moose. White wine.

I was super hungry when I woke up. I did do a series of work outs yesterday and walked 2 miles back & forth from pathmark. I felt headachey and tired today, but I also got my tooth fixed (yay!) and it was super dark & rainy (boo!). So I cannot chalk that up to gluten withdrawal.

Lunch: Tahini hummus, black sesame rice crackers, carrots
Snack: Pretzels (gratify gluten free), Clemintine, Toast & Butter (Udi's gluten free whole grain)
Dinner: Salmon & spinach salad with capers, cucumbers, tomatoes and green peppers. Toast & butter (Udi's), Dark chocolate

I don't feel very different, but not surprising since It's day one. Oh I did crack my tooth yesterday that was weird and unrelated. I did a calorie count and was just under which never happens. I guess wheat usually adds a lot of calories.

Start

I decided to try a gluten free month to see if wheat is a trigger for my rosacea. I thought it would be fun to blog a diary of my food consumption and also how eliminating wheat makes me feel during the process. I would like to incorporate better food into my diet, so writing every down helps me figure out where I can do that.
