Day Twenty Three

Breakfast: Yogurt, granola, blueberries, tazo green tea
Lunch: Green salad, tomatoes, mozz, olives and cucumbers
Snacks: Doritos, Baked lays
Dinner: Grilled squid and veggies, miso soup, small salad

Second day at work was more productive, even without computer. Tomorrow is supposed to be a big snow day, so hopefully commute won't be terrible. We stocked up on some gluten free bread, rice crackers and hummus. Thankfully only a week left, but I'll probably slowly introduce gluten into my diet. Brian is leaving for Malaysia on Thursday, maybe I'll start cutting out chocolate this Friday and stick to the no gluten for one extra week. (Maybe)

Day Twenty Two

Breakfast: Yogurt, Granola, fruit, coffee
Lunch: Green salad, with green, quinoa and jicama
Snack: Rice cakes and peanut butter
Dinner: Chili, GF bread

1st day back to work in 6 months! Part time anyway. I got in the city 45 mins early b/c I was worried about delays/snow. So I settled down at a Starbucks for yogurt and a free sample of coffee. I'm assuming the granola had to gluten. Then I went to another starbucks later for a salad. Dinner was left overs from the superbowl!

Day Twenty One

Breakfast: Yogurt, granola, pistachos, blueberries, bananas, matcha green tea
Lunch: Hummus, lentil crackers
Snacks: Guacamole, Chips, salsa
Dinner: Veggie chili, roasted potatoes, GF chicken fingers, bean/cream cheese, cheese dip, pudding!

Superbowl Sunday! And it was 10 miles from my Mom's house. Kind of nuts but no traffic. It wasn't hard to avoid gluten today b/c most superbowl food is gluten free! There was breaded cauliflower fingers but I skipped those :) Less then 10 days left!

Day Twenty

Breakfast: Rice cereal, blueberries, bananas, matcha green tea
Lunch: hummus, carrots, cucumbers, lentil crackers
Snack: GF pretzels, rice cakes, rice cereal
Dinner: Hamburger on lettuce, tomato, french fries, coke

I ran 3.5 miles this afternoon so I was pretty hungry late afternoon. I knew I wanted a burger for dinner so I was trying to eat light. We went to the dine in movie theater so gluten free choices are light. Burger on lettuce worked out fine, although kind of hard to eat in the dark.

Day Nineteen

Breakfast: Rice cereal, blueberries, banana, matcha green tea
Lunch: Hummus, carrots, cucumbers, lentil crackers
Snack: Pretzels
Dinner: GF fusili, tomato sauce, GF toast, green salad, red wine, dark chocolate, mint tea

With ten days left I do see less flare ups in my skin, but there is still a redness and little bumps. I filled a finacea prescription from my dermo to help with the redness. I used to use it a few years ago, I'll see if it helps.

Day Eighteen

Breakfast: Yogurt, granola, blueberries, banana, matcha green tea
Lunch: Hummus, lentil crackers, carrots
Snack: Synder's GF pretzel sticks (the best), sprouted rice cereal
Dinner: Grilled salmon with capers on a bed of greens, cucumbers and tomatoes! Red wine. Dark chocolate and mint tea

Synder's GF pretzel sticks takes the cake for best GF pretzels! I tried my new organic rice cereal today, it's very good. The only problem is I eat two bowls at a time. We made a great dinner of grilled salmon, delicious!  Since I only have 12 days left of GF I think I might extend it a few weeks while I cut out chocolate. I don't want to break out if I reintroduce.

Day Seventeen

Breakfast: Bag of popcorn, banana, lemon green tea
Lunch: Tomato soup, greens
Dinner: Lamb mousaka, lemon macaron, and rice pudding. Tea.

I had another interview today and two doctor appts in the city. I didn't eat anything until 11:00 so that is why I had popcorn for breakfast. I probably should have had just fruit. It was a super crazy day. I met up with a friend in montclair and brought her macarons. Best discovery of the day, they are gluten free!!! I was my dermo today and asked her about rosacea triggers. She said there is not much research yet on gluten, but known triggers are spicy foods, alcohol, chocolate, etc.. I might try to eliminate my chocolate consumption and see what happens! I should really do all sugar, but that's hard. Another note: I ate red meat again and I felt very bloated and sluggish afterward. I'm not sure if staying away from meat, then consuming it is making it harder to digest, but maybe good reasons to start eliminating it from my diet.
